Thanks Tim – altough Heinz also have a huge factory near Wigan, so they may have forced all the native Lancastrian sauce manufacturers ‘underground’.
Notice Dylan Evans in the Guardian discussing food which “we eat without relish”.
Obviously another guy desperate for decent brown sauce.
Please forgive my yankee ignorance, but what in the world is “brown sauce”? It sounds terrible.
Tim adds: Well, it’s a type of ketchup. The one everyone is familiar with is tomato ketchup, of course, but it can be made out of many more things. Vingar and salt and sugar and item x, boil them all up together into thick gloop and you have ketchup. One old style one is anchovy ketchup and the most famous brown sauce, HP, is based on that idea (with dates taking the place of the sugar as well). Yes, I know what it sounds like but it tastes pretty good.
Laban does not seem to have comments enabled on his blog (shame)
How about Henderson’s Relish from Sheffield, Yorkshire.? Sort of like Worcester sauce, but different.
Even Google Maps pops up a map of the Sauce manufacturers and distributors in Wigan, based on the Yellow Pages listing at http://www.yell.com Sauces & Relishes category.

Are the secret brown sauce factories near to Bill Tidy‘s Fosdyke Saga Tripe Works ?
I have made a culinary breakthrough – the discovery of the 4.5 kilo catering size Daddies Sauce. The 3 kilo Branston jar is pretty impressive too.
I live in Wigan but have no Idea of said factory
